2016 Dry Rose of Zinfandel, Mendocino Ridge 'Signal Vineyards' - Dashe Cellars
The vintage of 2016 was the first year that we made wine from this extraordinary vineyard in Mendocino County. The Signal Ridge Vineyard is the highest elevation vineyard in the Mendocino Ridge appellation which means it is the highest elevation vineyard in all of Mendocino County. The steep slopes, rocky soil, and cool climate of the vineyard make for a complex wine and an acidity that just balances out the lovely fruit flavors of the wine. Fermented bone dry, this rose is reminiscent of the beautiful dry roses that we love from the south of France. The pale pink color, beautiful aromatics, and crisp texture of this wine just speak to us of Summer picnics and BBQs.
We hand sorted the fruit, crushed the grapes to tank, and about eight hours later we removed a small amount of lightly colored juice to make this rose. As is our tradition, we fermented the wine on its native yeast, to obtain a distinctive wine that reflects its vineyard terroir. The wine was fermented to dryness in stainless steel, and was quickly bottled in April to keep its freshness. and bright fruit flavors.
This rose proves that it is possible to create elegant, complex, and flavorful roses from the Zinfandel grape, when selected from excellent vineyards and handled with care.
