2017 Chenin Blanc, Clarksburg - Dashe Cellars
Chenin Blanc is undoubtedly one of our favorite varietals here at Dashe Cellars. We have long been fans of Chenin Blanc from the Loire Valley, and have searched high and low for local Chenin Blanc grapes to try our hand at making wine from this extraordinary varietal. Luckily, we found a great vineyard in Clarksburg California, home to the vast majority of Chenin Blanc grapes grown in the state. This unique area is in the Sacramento River delta, where cool breezes from the San Francisco Bay cool the grapes, creating hot afternoons and cool evenings that make for ideal conditions to grow Chenin Blanc. We use a 500 gallon egg shaped concrete fermentation vessel affectionately named Bart to highlight the minerality of the grapes, and the results have exceeded our expectations.
We were fortunate that the weather conditions in 2017 allowed us to pick the grapes at a lower sugar level than normal, resulting in beautiful crisp flavors at a low alcohol level of 11.5%. The balance of acid and flavor was ideal for a crisp, mouthwatering wine. We picked the grapes at night to keep them as cold as possible and pressed the grapes to a concrete fermenter immediately on arrival at the winery. As is our style, we fermented the grapes on the native yeasts found on the grape skins. After a slow, 4 week fermentation we finally were able to reach dryness and we prepared the wine for bottling, to keep the freshness and liveliness of the wine intact. It has rapidly become a staff favorite, and Chenin Blanc is on its way to becoming a signature varietal at Dashe Cellars.
